Tres Leches

I have often joked that my hubby married me in hopes of having home-cooked Mexican meals every night. Well, his absolute favorite dish is my Tres Leches. I often experiment with this recipe. To date, this version is the best one. I have included pictures for your viewing pleasure, along with the recipe. It has taken me over 6 years to fine tune this recipe.

Tres Leches
  1. Bake cake (any flavor) according to directions, but SLIGHTLY over bake it. 
  2. Allow cake to cool completely
  3. Flip cake over to where bottom is now up
  4. Poke holes through out entire cake in several rows (fork tines work best)
  5. Combine Whipping Cream (heavy), Milk (evap, regular or cond), and Coconut milk (play with a combination you like. Here I add extra flavorings, such as Vanilla and cinammon.)
  6. Cover cake in pan with milk mixture
  7. Allow cake to soak for no less than an hour in refrigerator before topping or serving
  8. Optimum soak time is overnight. 
  9. Apply topping after soak. Keep refrigerated until serving time.
Suggested Toppings
  • Cool Whip
  • Fruit
  • Nuts
  • Chocolate (shavings, mini-kisses,syrup) 
  • You can also serve plain


Tips
  • The drier the cake, the more milk it will soak up
  • Trim sides of cake before you place it back in pan with bottom up, this will allow sides to get more milk
  • Drain milk to cake level before applying topping (frosting)
  • If milk taints frosting, it is okay. The frosting with milk will set while refrigerating and you will more than likely cover it up with toppings.
  • Reserve some of milk mixture to drizzle over cake while serving to ensure milk coating. Keep a gravy bowl filled with reserved milk and allow guest to drizzle on. 
  • Make a chocolate Tres Leches by using chocolate cake mix and chocolate cool whipped topping. 
I would also like to share a new rub with you all. My mother-in-law introduced me to it.This Chipotle rub is fantastic. It adds just the right amount of cinammon to the seasoning mixture. I rubbed it into my chicken breasts and grilled them. I then diced the chicken into cubes and tossed it with my Mexican Rice. The kids loved it. The whole meal was gone in seconds! There is no feeling like when your kids ask you for seconds.

I wish I had this recipe when I was making tres leches for a friend's bday a few months ago. It looks great!
