Parmesan Frico Shell

The first lunch I ever went to with my hubby was with people from work. We went to a snug little Mexican cafe near the office. I had not really had the chance to speak with him, but I was looking forward to learning more about him, especially since he worked for our company abroad. Well, the opportunity arose at this particular lunch, when he seemed interested in the salad I was having. The taco salad I was eating came in a shell made out of fried cheese. Fried cheese. Need I say more? I broke off a piece to let him try it. Little did we know then that we were sitting across from the loves of our lives, what we did know was that the fried cheese shell was amazingly good.

Yesterday, I made myself a lunch that was light fare: a spinach salad, yogurt, banana, and orange juice with orange slices. The only semi-guilty component, was my homemade parmesan frico shell that I adapted from Giada de Laurentis.

I used only 1/3 cup of shredded Parmesan cheese blend (Kraft shredded blend, not grated from wedge) to make my shell to stay within "healthy" boundaries and added extra flavor to the cheese by adding oregano and garlic powder. I then baked the shell as directed in the recipe and shaped it into a muffin cup. It was not as big as Giada's, since she used more cheese for her cups, but it was enough for a small salad. When the cup was set, I added fresh spinach leaves, tomatoes, blueberries, orange slices, olives, and a little bit of lemon juice.

It was cute and a perfect portion to eat for a light lunch. I think I am going to use these at my next dinner party for mini taco salads or side salads.

I will definitely make one for my hubby, minus the lettuce and veggies, which he HATES!
