Elegant Cherry Cups

I absolutely love to read recipes. I will find them anywhere; magazines, newspapers, product labels, internet, blogs, books, family,and friends. I have a kazillion recipes I would like to try. I am constantly searching for them, saving them, clipping them, printing them, anything. I've got to have them. I think I am addicted. Know the feeling?

Well, today I found this little beauty of a recipe and photo in my inbox, courtesy of Pillsbury. It is called an Elegant Cherry Cup. I will definitely try this one out this week to pass along to my family and friends. After all, it is Valentine's Day week and I am feeling generous!

Here is the recipe as copied and pasted from the Pillsbury site:

INGREDIENTS:

Cups
1 box (15 oz) Pillsbury® refrigerated pie crusts, softened as directed on box
1 teaspoon sugar
1/3 cup chopped white chocolate baking bar

Filling
1 carton (7 oz) crème fraîche (about 1 cup)
1 cup cherry pie filling
1 tablespoon kirsch or maraschino cherry juice
3 tablespoons chopped white chocolate baking bar

DIRECTIONS:
1. Heat oven to 450°F. Unroll pie crusts on work surface. Sprinkle crusts with sugar; press in lightly. Cut 16 rounds from crusts with 3 3/8- to 3 1/2-inch round cookie cutter. Press sugared side up in bottoms and up sides of 16 regular-size muffin cups, without going to top edge of cups. Prick each crust generously with fork.
2. Bake 6 to 8 minutes or until lightly browned. Sprinkle 1 teaspoon chopped white chocolate in each cup; cool 10 minutes. Remove tart shells from muffin cups. Place shells on serving platter.
3. To serve, drop about 1 tablespoon crème fraîche into each shell. In small bowl, mix pie filling with kirsch; top each with cherry mixture. Sprinkle about 1/2 teaspoon chopped white chocolate on filling of each.
High Altitude (3500-6500 ft): No change.


I would like to try substitutes and add-in for this dessert. For example, try using Ricotta or cream cheese, instead of crème fraîche. Maybe, adding some dark or milk chocolate, somehow, someway into this luscious equation.

I'm a recipe addict too. I'm constantly ripping recipes out of magazines or printing them off the internet.

Yum! Those look good...
My favourite substitution:
When making baklava, you have to make a simple syrup and dredge the baklava in that. Instead of making boring plain simple syrup (water and sugar), I do a combination of water, honey, orange blossom water, vanilla bean, and fresh squeezed orange juice. The result is CRAZY!
Also, for pavlova, instead of just plain whipped cream, I make a white chocolate orange ganache, using special orange-flavoured white chocolate. SO GOOD!
