Post #102: A Little Slice of Heaven, Really, Just Pizza!

It is funny how "little" is in, especially in the culinary world. I mean everyone swoons over mini cupcakes, muffins, appetizers, hamburgers!

Recently when I had my peeps over for dinner, I served them up some mini gourmet pizzas as apps, amongst a whole island full of goodies! It was so easy. Although, I must admit, I was so tempted to make it seem as it had been a labor of love.

All I did was use my trusty ole pizza dough recipe, but substituted in whole wheat flour. Then, I rolled out the pizza dough into one big 14" circle. I cut out 4" circles,as many as I could get out of the dough. I pre-baked the mini crusts for about 4 minutes at 425F, for a crispier crusts. Then, I brushed them with Extra Virgin Olive Oil and drizzled on some honey. Finally, I added the toppings. Put them back in the over for a few minutes more. Then, they were ready to devour.

One pizza was topped with caramelized onions and sage sausage. I made this one in mind for the brawny men. The other was a Margherita Pizza, made with fresh basil and sliced Roma tomatoes. This of course was for the ladies.

They did not last long. I think I got to eat a few caramelized onions that fell off onto the pan.

Oh, well, that is what a hostess does, serves and starves!


Thanks for putting up with these eye sores called photos. It is hard to  remember to take pictures, much less take good pics, while you are cooking to entertain!

I'm making pizza as I'm typing this, and I recently learned that pre-baking the crust is the way to go!

I love the sound of mini pizzas! I have some pizza dough in the freezer right now, I am totally going to make these.
