Post #112: TWD Banana Dream Tart!

With me, usually my best comes out when I am least prepared. Go figure. The best laid plans for me often go wrong. The less I stress, everything often turns out for the best. In this case, "everything" is this week's TWD's challenge, Banana Cream Pie, hosted by Amy of Sing for Your Supper, which I should make my family do! That would make every night interesting, especially when we have company over!

Okay, so first for this recipe, I could not find my pie pans. They were nowhere to be found, which leads me to suspect, I may have borrowed my past pie pans from my Dearest Sweetest Neighbor, Dragana. This would make sense since I have just recently taken up baking and making my own pie crusts. Since I made this late last night while the baby was sleeping, I did not call to ask her to borrow one. Instead, I improvised and made little tart shells. I halved the recipe for everything; pie crust, filling, and topping. I already knew that I was only going to make one for each of us, especially with Easter being right around the corner and my sweet tooth just seems to get even sweeter now-a-days!




The kids came home to homemade banana dream tarts for their after school snack. They better remember this in my old age! I even plated these beauties with caramel sauce.

This recipe was really easy to put together. It was a great creamy custard with a sweet topping that had a slightly "tangy" undertone from the hint of sour cream. It tasted just like a "sunny day" dessert should taste, fresh and dreamy.  I will definitely serve these again over the spring and summer.

I must confess to several things:
  • I did not sift the cornstarch called for in the recipe to the best of my ability
  • I especially did not press the brown sugar through my sieve
  • I accidentally used butter flavored extract instead of vanilla in the topping
  • I did not add the freshly grated nutmeg, or any nutmeg for that matter
  • And I licked many spoons during the making of this dessert

Beautiful! How would you know if it tastes right if you don't lick spoons! I'm not a big nutmeg fan and usually leave it out too!

What a great idea making little tarts, they look so pretty. I had a funny (now) moment when I was baking apple pie for a party and realized I didn't have a pie pan and that all the other times I baked pie was at my parent's house with thier pans! I had to DART to the store, and bought the last pie pan.

Now THAT is an afterschool treat! I did not press my brown sugar through the sieve either. I did try though (and therefore got the sieve dirty) but it was just not happening. Your pies are beautiful! Love the caramel.

Oh, that looks so good...and so fancy! Can you imagine being a kid and coming home and having that sitting before you? Wow...all that drizzle and goodness. They will remember! Really fun post...it's always fun to get a giggle or two when parading around reading the posts each week. You never disappoint! Great job!

Hahaha I licked SO many spoons during the making of this dessert... pastry cream, whipped cream topping, pastry cream, whipped cream... so good! Love that you improvised and made the mini tarts - they look delicious!

Making the small tarts is a great idea - who needs a pie pan? The only problem is I could eat 2 or 3 of the tarts. The look incredible.
