I made my sweet neighbor and my boys' fellow friend, Aubrey, some cupcakes for her birthday. She is really a great kid and deserved some extra special cupcakes. What made them so special? Ice cream centers.

I know. The picture does not do justice at all to the cupcakes, but they were really cute and easy to make!
Here is how to do them.
First, you bake some cupcakes. Then, you let them cool. While they are cooling, let your ice cream sit out to soften, not melt, just soften. Then, you cut about an inch whole into the cupcake and take it out, exactly the way I did it in my Rubber Ducky cake and cupcake post. Then, put a generous tablespoon or two of ice cream into the center. Apply the top back on. It is okay if the ice cream overflows. You can spread the ice cream smoothly on the top. In fact, this makes it taste better, so I highly recommend overflowing! After you have filled all the cupcakes with ice cream, put them in the freezer to set for an hour.
Finally, top your cupcakes with whipped topping (homemade or store bought). Apply sprinkles or decorations of choice. Then, place cupcakes back into freezer and allow to set for an additional 30 minutes. Set out for 20 minutes or until softened a little before serving.
Aubrey said they were super yummy!

Super fun and very decadent! My mind is racing with all the ways you could adapt this for the adults (I'm thinking filling with chocolate mousse or ganache, or white cuppies with lemon curd...
