Post #125: Alive and Baking TWD Fresh Mango Bread

I just told my hubby that I was excited to write on my blog again.  He asked me why. I replied, "It is like seeing an old friend again".

I can not believe how tired I can get nowadays and how easy it is for me to defer things on my infamous "TO DO" list for another day, sometimes week.  Still, I am no closer to what could be ailing me other than the typical answers of postpartum hormonal changes and stress. What is a girl to do? Take a nap and bake? Why not?

So, that is what I did. Bake, that is.

 First, I knew I wanted to make this recipe after one of our fellow TWD'ers and my good friend, Dragana, made it and let my family have her awesome dried mangoes-muffin version of this recipe. It was so good, gingery, and moist. I just had to make this recipe, especially since my hubby and kids melted over it.

Of course, I did feel like a fish out of water. For some reason the rhythm was not there.  I hovered over the oven, worried that my monster of an oven would overly brown my bread, as it tends to do. Took it out of the oven too early (even though the knife came out clean). Realized that it was not done when I began slicing and saw the middle slices were still gooey. Yikes! I threw them and the remaining loaf back into the oven. Well, it baked a little better.

Even though the rest of my slices were not as pristine, they are delicious and edible. This is a great bread recipe! I love it. It is fresh, peppy, and great with tea or coffee! Then again, I love bread. I drizzled honey on mine as soon as it came out of the oven. I also added 1/4 cup of almonds to the batter.  I look forward to making several of Dorie's bread recipes this week (something I have chosen to do for practice).  One is her Oatmeal Breakfast Bread. Another is her Brioche loaf.  I would also like to try this recipe again, but use cantaloupe, instead of mango.  I might even have someone one who actually has upper body strength mix the batter for me (she laughs, but is so serious).

Hope you're up and around soon. The knife test never works for me. It's like all the goo gets cleaned off by the top crust and I can't tell that it's underdone. Ah well.

Nice job. I have tossed things back in the oven after slicing them too. Cantaloupe would be an interesting variation on this.
