From Easy Fruit Dip

Even though, it gets really hot and humid here in Houston, Texas, I really do enjoy the summers. Yes, it is true, I am not as "Texas Tough" as I used to be when it comes to the heat, but I still get out there and have fun in the sun. I also love to snack on fruit, while I am beating this heat! All year long, I try to stock up on guilt-free, oh-so-yummy, fresh fruit, but in the summer, you can find PLENTY of fresh fruit and buy it pretty cheap. That makes me very happy.

As good as fruit is on its own, I do not mind dressing it up a little. Before I head out for vacay, I wanted to share an easy fruit dip with you all. Maybe, you can use it for this weekend, to dress up your fruit salads or watermelon slices!

Easy Fruit Dip (adapted from Southern Living)
1 - 8 oz. container of Sour Cream or Plain Nonfat Yogurt (light versions work great, too!)
2 - tbsp. Light Brown Sugar
1 - tsp. lemon zest
1 - tsp. vanilla
Stir all ingredients together in a bowl. Whisk with a fork to break up brown sugar for easier mixing. Cover and chill for at least 30 minutes to 2 hours. The longer you chill it, the stronger the lemon flavor will be pronounced.

This is a simple, light, and sweet way to add something special to your fruit! Play around with it if you want more of any particular flavor to come through. It is a healthier alternative to heavy cream.

Have a Happy and Safe 4th of July!

I will be back in the kitchen on Wednesday.

Wow what a great idea, we eat fruit with breakfast and it sure gets boring! I can use my sugar free fake brown sugar too!
