Post 147: TWD Banana Nut Bundt Cake

I love Bundt cakes. They are old-fashioned Southern cakes that bring about thoughts of simpler times and occasions. My grandma often made Bundt cakes. If she made a Bundt, then we knew there probably was a church potluck, people coming over, or a death in a family we knew. While the death part was not a cheerful occasion, the cake was a comforting gesture. In fact, that is just what it is, comfort food, which is why even though I baked it, I can not eat it...this time around.

 Perhaps my favorite part of a Bundt cake, besides its familiar shape, is the way it pairs perfectly with a hot cup of coffee. No matter what flavor it is. I also love that it is a special gift to welcome people into the neighborhood or to take to a potluck without having to break the bank. The only substitution I made was halving the AP flour with whole wheat flour. I also added crushed nuts on the top of the lemon icing.  Next time, I will use less sugar or substitute with Splenda and see what other healthier subs I can make.

I did taste the batter and it tasted great! I am sure my friend will be sure to tell me how good it tasted after I deliver it to her this evening. Eating right is rewarding, but it sure can be tough!

Yum it looks great! I love that your Grandma enjoyed baking these cakes. It's sweet when a certion dessert or meal reminds us of someone! I loved this recipe and will make it again and again!

Bundt cakes are so yummy! (though I guess I have to say that, since I'm Southern). I've never had a banana one, but I'll have to try this one!
