Here is a recipe my daughter says I came up with on my own a long time ago when we were down to slim pickings in the fridge. I made it the other day for kicks. What I like about this recipe is that it is good for families and single people alike. I think it will be especially great for my daughter to use when she goes off to college and has to fend for herself!
Pizzcuits
Ingredients:
1 can of refrigerated can biscuit dough (I used Pillsbury Grands Biscuits)
Spaghetti or Marinara Sauce
Mozarella Cheese
Toppings of Choice
Directions:
(Preheat Oven to Temperature indicated on Can of Biscuit dough)
1. Lightly flour a clean, smooth surface and rolling pin to roll out dough.
2. Separate biscuit dough into individual servings.
3. Take biscuit dough and roll out into a 4-6 inch circle. The thinner, the crispier. The thicker, the doughier. Thickness will affect baking times as well, so check pizzcuit midway.
4. Place dough circle onto a baking sheet or pizza pan.

5. If you would like an extra crispy pizzcuit, then prebake dough for 3-4 minutes before adding sauce and toppings.
6. For a softer crust do not prebake. Add sauce, then toppings. TIP*- add only enough sauce to lightly cover the dough. This will help keep your pizza crust from being soggy.

7. Bake 4-6 inch pizza circles between 8-10 minutes.

8. Let pizza rest for a few minutes.

9. Then, enjoy!
This is a great recipe for a quick bite to eat and individual portions. I refrigerate the leftover unused biscuits in a Ziploc bag for later use.
You can also make a good dessert pizza with this same recipe following the same steps and brushing the raw dough circle with melted butter and sprinkling with cinnamon-sugar or topping with apple pie filling. Then bake. You can also bake the pizzcuit and spread with melted chocolate for an extra special treat.

DUH, rolling the biscuit dough out is a brillant idea. I always make mine like pizza pockets but I think they'd be better & less doughy this way. Thanks!
