Pineapple Pudding Cake

Normally, I try to add some cute little anecdotes while I am submitting a recipe on my blog, something to draw you readers in (all one of you), share a little of my life, and give you something to smile about as you read along. However, I am happy to just have a few moments to sit without interruption from my two youngest ladies, ages 2 months and almost 2 years, so I will just have to say that this recipe is a must-try dessert! It is reduced fat and lower in calories than its non diet counterpart. It  was a success around these parts and is perfect for the summer.
Pineapple Pudding Cake
adapted from Taste of Home Comfort Food Diet Cookbook, page 277.
1 package (9 oz.) yellow cake mix
1 1/2 cups of cold fat-free milk
1 package (1 oz.) sugar-free instant vanilla pudding mix
1 can (20 oz.) unsweetened crushed pineapple, well drained
1 carton (8 oz.) frozen fat-free whipped topping, thawed
1/4 cup chopped walnuts, toasted
20 maraschino cherries, well drained
  • Prepare cake mix batter according to package directions; pour into a 13-in. X 9-in. baking pan coated with cooking spray. Bake at 350F for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack. 
  • In a bowl, whisk milk and pudding for 2 minutes. Let stand for 2 minutes or until soft-set. In a small mixing bowl, beat cream cheese until smooth. Beat in pudding mixture until blended. Spread evenly over cake. Sprinkle with pineapple; spread with whipped topping. Sprinkle with walnuts and garnish with cherries. Refrigerate until serving. 
Yield: 20 servings 
Nutrition Facts: 1 piece equals 131 calories, 2 g fat (1 g saturated fat), 1 mg cholesterol, 217 mg sodium, 24 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchange: 1 1/2 starch.
It is a nice, cool, sweet treat to help forget the summer heat!  Enjoy!


Tips:
1) Reserve cherry and pineapple juices and include them in the water portion  for the cake mix of this recipe. In other words, substitute juice for the water portion, then use water to make up for the rest. 
2) Don't worry if the pudding mixture and pineapple do not look perfect. In the end, the whipped topping, cherries, and walnuts cover the imperfections!

looks delish! though i no longer use cool whip for anything, ever since i found out it's just whipped up oils :/
