I wish I had more time to post like I used to. Heck, I wish I had more time to bake like I used to. I do make time to do some baking, but can not always manage the pictures or the posts! Oh, well, one day. I hope.
Here is a recipe I just tried that takes almost no time at all. It is my kind of recipe, easy. It is easy to put together, easy to bake, and a super easy clean up.
I love fall baking and I love baking with pumpkin as often as I can. I wanted to share this recipe with you all to help you make something special (but easy) for your homes or to share with the special people in your life!

For my own personal review, let me just say, I loved them. I loved the color and texture of the muffins. They came out with very full muffin tops. Perfect. The batter is thick, but even if it is not perfectly spread in each tin, the muffins will come out looking rustic and lovely. More importantly, they will still taste great!
I gifted mine in a tin. I could only fit 9! They were so big and pretty.
Yes, we had to eat the other three. Could not let them go to waste and had to taste-test them first before I gave them to my friends.
The only modification I made to this recipe was to add more spices to the batter. I love a spicier cake. I added a pinch more cinnamon, nutmeg, and cloves, and 1 tsp of pumpkin spice (not called for in original recipe) jut for good measure. I used Duncan Hines Yellow Cake mix and Libby's Pumpkin Pie filling.
For the gifted muffins, I sprinkled sweet nutmeg on the tops. It is fun baking gifts!

These muffins look perfect! I never get beautiful full tops like this with heavy batters liked pumpkin.
