Tonight was taco night. Today, my daughter suggested taco salads. She even mentioned we could make our own shells. Make our own taco shells? Sounded like fun. She mentioned that she had read up on it and it was easy to do. I immediately "GOOGLE" ED it and found this old site, Therapeutic Ramblings, which had some amazing recipes, including what I was looking for, homemade tortilla shells! We were in business.

Now, I am a big fan of taco salads with shells. My crush began when I was in high school and tried my very first taco salad at the Taco Mayo near our high school. After that, I was hooked. Every time someone asked in our group where we should go to eat, I immediately exclaimed, "Taco Mayo!" I did this so much that my twin sister eventually exclaimed, "No more Taco Mayo!" There you go, a blast from the past.

I used homemade tortillas, but store bought could be used as well. It took my tortillas about 15 minutes to come out crispy while baking them in microwave-safe/oven-safe bowls, but I highly recommend that you check up on these feisty fellas every few minutes to make sure they do not burn to a cinder. Store bought tortillas may take less time than my thicker version of the Mexican staple.

As you can tell by the pictures, we piled our shells up with a mixture of fresh greens, tomatoes, olives, shredded leftover chicken, and toppings of cheese and salsa. What you can not see is that we had a bed of beans on the bottom.

Yes, they were as good as they sounded and my sister would be happy to know there will be no more Taco Mayo.

Here it goes...the spirit of the mistress cakes are not mine they are from flickr (as stated in my profile disclosure) Most of the time the homemade junkfood journey's aren't either. The rest of the stuff is. The reason why they aren't mine is because if I made that much junk food I wouldn't be able to fit through the door lol. I have some skill but not like these people. I just wanted you to know. HOPE YOU DON'T HATE ME NOW!
