What can I say? This recipe chosen by Whitney of What's Left on the Table? is simply one of my new favorite baking recipes! I absolutely love it! I really am a big fan of simple, easy, special looking treats! This recipe fits that category to a "T"! It takes hardly any time to prepare and even less time to bake! I highly recommend this Caramel Crunch recipe not only for taste, but for special treats for any occasion. I wish I had tried the recipe to fill my Christmas Gift Tins with.

The only substitution I made is that I used richly flavored dark cocoa powder for the espresso powder, which worked out wonderfully. I did this because some people I know do not like coffee flavored goodies! Don't ask me how, but it is true. I wanted to make sure I made it flavor- friendly for all, especially since I plan on giving most of it away. It is a hard sacrifice to make, but I have to do it for me and my hubby's fitness goals. I must confess to eating all the crumbs that were created while cutting the individual bars! I will have to run extra to burn those tasty toffee bits off!

I did not really play with this recipe, because it seemed wonderful the way it was. The only ideas I may use next time (because believe me, there will be a next time) are adding additional toppings to the toffee, such as crushed Thin Mints or Mini-Chocolate Chips and preparing several different flavored ice cream filled sandwiches. I love variety! This time around, my hubby picked out Dryer's slow churned (weight watchers friendly) Caramel Carnival Ice Cream to fill our incredibly tasty toffee topped treats! He described the Caramel Crunch Bars ice cream sandwiches as ice cream filled between Skor bars. Perfect description I thought.

I am so happy that I tried this recipe out. It is so easy and full of choco-cookie-toffee-ness.

i agree--this was super easy to make, and so yummy. next time i'll have to try it with the toffee bits, though. yours look great!

These look great! I used the espresso powder. It was a stronger taste than I was expecting, but it works.

Wow, these look fantastic! I love your idea of subbing cocoa for the espresso powder. That photo with the ice cream peaking out is too tempting for words!
