From Aqua Frescas Sandia

Here is a recipe for a refreshing summer drink called Aguas Frescas. Aguas Frescas is a very popular Mexican drink found in Texas during the summer. This recipe uses watermelon, but almost any fruit can be used. Common flavors are strawberry, cantaloupe, and mango, just to name a few. You can really go crazy and combine fruits and flavors. I added cinnamon and lemon slices to mine. Cinnamon to bring out the watermelon flavor and lemon to add color.

Sandia (watermelon) Aqua Frescas (refreshing cool waters)

4 cups of seedless watermelon (make sure it is nice and ripe)
4 cups of water
1/2 cup of sugar (sifted brown sugar works nicely. may adjust sugar as needed)
1/4 cup of lime juice *-optional (brings out flavors. may use lemon)

Puree 4 cups of watermelon. Then, add puree to a pitcher through a strainer. Add water, sugar, and other citrus juices. Mix well. Then, chill. The longer you chill the better. I also add bits of diced watermelon for added texture. I reduced the sugar in mine to 3 tablespoons to reduce some of the sugar content. Watermelon is already high in sugars, so I try not to go overboard!

This is a really easy recipe. It is also a great way to use up leftover fruit or entertain guests pretty cheaply during a Summer Bar-B-Q or party.  It is also exotic looking and very refreshing drink.

Hope you enjoy!
