Post #179: "The Sun is Out!"-Cinnamon Doughnut Muffins

I must confess here and now that my favorite doughnut is a cake doughnut. I love cake doughnuts. We do not eat doughnuts much in our house. Don't get me wrong. If my hubby decides to go out and pick up a dozen, then I am not one to object.  I display my lack of objection usually by eating two of my favorite kind of blueberry cake doughnuts, just to prove my point.

Cake doughnuts were not always my favorite. I think my journey through the land of fried dough has been something like this:

1. ages 2-5, any doughnut
2. ages 5-9, doughnuts with sprinkles (like most kids)
3. ages 9-12, chocolate glazed doughnuts
4. ages 12 -16, eclairs
5. ages 16- to present, cake doughnuts

When Shelby of Life and Loves of Grumpy's Honeybunch featured this cinnamon doughnut muffin recipe from the Noble Pig site, I just knew I had to bake these babies this morning and add Cathy's wonderful Noble Pig site to my Google Reader. Check out both ladies' sites. You will be hooked like I am.

The menu this morning was cereal, fresh coffee, fresh cantaloupe, and these amazing muffins!


From Cinnamon Doughnut Muffins

These muffins are so easy to make. They also are better than doughnuts from a bakery or store! Much better. I used raspberry preserves to fill mine (refer to Cathy's recipe for step-by-step directions).  They are a combination of a cake doughnut (my favorite!) and a jelly doughnut wrapped up nicely in a cinnamon-sugar dusted muffin! I mean does life get any better than this?

I made mine a little bigger than Cathy's recipe called for, filling my tins more than 3/4 full. I was able to make 7 big muffins. They were big and beautiful. Just like me at almost 31 weeks of pregnancy!

Oh my word. They looks SO delectable Caroline! Seriously. WOW! I would love to try my hand at those! :)
